I don't have the words to describe this week or how it felt. But, I do have the simplest most delicious and healthy recipe for kale chips! When my friend Sheri recently visited I stocked my fridge with food. Snacks for the beach, stuff for her birthday dinner, ingredients for a fruit pizza, breakfast stuff, and late night munchies. But I know what it's like to travel and feel bloated from eating out or splurging on too much beer and pizza, so I tried to be healthy about my grocery shopping decisions. And that is why I bought a big bunch of Kale. The sad part is we were too busy to use the kale. It forced me to make them this week on my own just before the kale went bad. And within 30 minutes of taking them out of the oven they were gone. Yes I'm a pig. And yes, they are that delicious. So delicious I bought even more kale yesterday to do it all over again. I sent Sheri home with the recipe, so I thought I'd share it with you.
1 bunch of kale (the curly kind)
1 tablespoon of olive oil
1 tablespoon of red wine vinegar
1 pinch (or 2) of salt
spices of your choice (sometimes I like a pinch of garlic powder and pepper)
Preheat oven to 325. Break the kale leaves off into large chip size pieces. Discard the center vein. Wash the kale pieces and dry it very well with a towel or in a salad spinner. Toss them in a bowl with the olive oil and vinegar until evenly coated. Spread out on a cookie sheet (or two) in one layer. They can be touching just not laying on top of one another. Sprinkle with salt (and spices if you want) and place in oven for about 15 minutes. They should be feather light and crispy. Then devour. (Sharing optional.)
